The workshops include discussion on both the theoretical foundation of fermentation and practical applications of these techniques. Inspired by the hotel's farm to table restaurant the new workshops are a representation of the essence of the restaurant that is freshly sourced and home made with local produce.
Art of Living Beverage Elixirs
This comprehensive 2.5-hour experience begins with an exploration of beverage elixir history, covering the cultures and preparations essential for creating wellness drinks. Participants learn to ferment various tonic and alcoholic beverages, understanding the role of beneficial yeasts and the art of natural carbonation. The session concludes with a guided tasting and participants receive starter cultures and materials to continue their elixir journey at home.
Fermented Flavors of Baja
This hands-on workshop captures the essence of local Baja California produce through lacto-preservation techniques. The experience provides training in the principles and variables that ensure successful food preservation while maximizing flavor and nutritional benefits. The program includes understanding microbial cultures, mastering key variables such as water quality and salt ratios, hands-on creation of lacto-preserved pickles, sauce and condiment preparation, and seasoned vegetable techniques.
Both workshops accommodate intimate groups of 2 to 10 participants and include all starter cultures, ingredients, and tastings. Instruction ensures participants gain confidence in these traditional methods while understanding the science behind the transformation process. The elixir workshops require a minimum of two weeks advance booking to guarantee expert instructor availability and proper preparation of all materials.
