New Tacology Pop-Up for Summer Celebrates Authentic Mexican Traditions at Grand Velas Riviera Maya

Riviera Maya, Mexico (May 12, 2026) - This summer, Grand Velas Riviera Maya opens Tacology — a culinary pop-up celebrating the bold, soulful traditions of Mexican taco culture. Launching as part of the resort's summer season offerings, all included in the nightly rate, Tacology invites guests to gather in a more informal and casual environment. The offering was conceived by Chef Nahum Velasco, Creative Gastronomic Director of the resort, who most recently led the hotel's Cocina de Autor to a MICHELIN star for the second consecutive year. 

Available select evenings from 6 to 9 p.m., Tacology transforms the resort's garden into a lively open-air gathering spot where the art of the taco takes center stage. Guests are invited to explore a curated selection of Mexico's most beloved taco traditions — from the slow-marinated, spit-roasted al pastor crowned with a touch of golden pineapple, to the tender suadero and savory beef, each prepared with authentic technique and the finest ingredients. Every taco is dressed with the classics that make Mexican street food an enduring culinary tradition: fragrant cilantro, finely chopped white onion, and vibrant molcajete-style salsas, crafted fresh and full of character. Evenings are rounded out with warm, crispy churros — the perfect sweet note to close a perfect Mexican meal. As the scent of the trompo fills the air, the gentle sound of live guitar sets a festive mood, evoking the spirit of a Mexican summer evening.
